Can one say
a. I don't think anybody wouldn't want to have a job like yours.
instead of
b. I don't think there's anybody who wouldn't want to have a job like yours.
?

The sentences are mine.

I use (b). It seems to me that (a) works, but I am not sure.

    The sentences are grammatical, but it practice it is awkward and confusing so string several negatives together like that, so we generally don't form sentences that way. Instead, we would say something like "Anybody would want a job like yours" or "Who wouldn't want to have a job like yours?"
