I know that I want to eat is tabetai.
How do you say I don't want to eat?
Maybe tabenakunakatta desu?

"Tabetakunai (desu)" or "tabetakuarimasen".

Tabetai conjugates like an i-adjective. This is valid for the -tai form of all verbs.
