I’m translating a croissant dough recipe and I’m having trouble understanding the last sentence.

« Étaler le détrempe de façon régulière en rectangle sur 7 mm d’épaisseur. Il faut toujours étaler en allant droit devant soi. »

Does the last sentence mean “you must always spread it by going straight forward”?

    Yes, pretty much. The dough is stretched/spread/shaped/rolled out on the work surface with a rolling pin. You're supposed to roll away from you (and straight back towards you, if necessary) -- so no side-to-side motions, diagonals, etc.
