I don't understand the role of the bold part in the whole sentence. Could someone please explain it to me?

    The phrase "isolation removes extraneous variables" comes after a dash. In this case the dash is serving the same function as a colon and it let's you know that the next clause is going to explain or elaborate on the main part of the sentence.

    We have: The Tokugawa period Japan (1603–1867) serves as a laboratory for organizational behavior historians for the same reason thatIceland works for geneticists—isolation removes extraneous variables.

    There is a common reason for both phenomena, and that reason is "isolation removes extraneous variables".
