    Your sentence is also a good sentence but it has a different meaning/emphasis. This is my understanding.

    Kevin was emphatic that the event must be canceled.

    This is describing his opinion about the idea of canceling the event. It sounds like other people might have other opinions.

    Kevin was emphatic that the event be canceled.

    This sounds like he has the power to order that it is cancelled. It sounds like he could make that decision himself or that he had the power to order someone else to do it.
