Le petit mignon de porc avec ses sphères du même nom

I'm struggling to translate this menu item:
Le petit mignon de porc avec ses sphères du même nom fumé en terminaison d’un pique de mini pomme aromatisé au Cointreau, sauce à l’estragon.

I think it is:

Pork filet mignon served with an Apple sauce aromatised in Cointreau and Oregon.

Can anyone propose anything better/ more accurate?

Hello Sland1, welcome to the WR Forum,

Well, firstly: "avec ses sphères du même nom fumé" is this "with spheres of the same non-smoked" (i.e. "with unsmoked pork spheres").

And, secondly, "en terminaison d’un pique de mini pomme", I'm confused by the word "terminaison d'un pique" -am I right in thinking its just a way of saying: "sauce"

nom means name - filet mignon served whole with smoked balls of the same meat spiked on top of the fillet and topped with a small (= new) potato on a stick - needs a picture as context to confirm!
