If I want to say that I will momentarily stop playing with a video game but start over later, can I say I make a break with this video game?

Your phrasing is not in the least idiomatic and is somewhat confusing.

"I want/need to take a break from this video game" would be very idiomatic.

I agree with bibliolept. The idiomatic phrase in English is "to take a break from something", so in this instance "I'm taking a break from this game" or "I'm taking a break from playing this video game."

Another note: it sounds more natural to say "playing a video game" rather than "playing with a video game".
