Listening to the audio, I hear Mi-e așa foame, domnule! , but as far as I know, in order to be correct, it should be Mi-e așa de foame, domnule! My question is, can "de" be omitted like this and is it still correct? Or is it an error?

I'd say you're right, but in fast speech you'll hear plenty of native speakers omit the "de". We also say "Mi-e așa o foame... " at times (which is a modified version of another informal thing we say: "Am așa o foame în mine că aș mânca [abnormal quantity of food or some large animal here])
