If you do a google image search of 'col cheminée', 'col montant', and 'mock turtleneck', you'll get, within each search, a variety of collars of different heights. There does not seem to be a lot of agreement within the clothing industry for how to label certain collar types.

The GDT, like archijacq, gives 'col cheminée' for mock turtleneck.

And the GDT gives 'high collar' or 'high-necked garment' for 'col montant'.
