I have seen this translated as mother's daal but I was wondering if this simply means maash ki daal since maash is maa in Punjabi, right? What is the intended meaning when it is used as the name of the famous dish?

It is maa_hN dii daal (h for tone). Nothing to do with maaN/mother and you are right, it is connected with "maash kii daal".
