Context: instuctions for a recipe.... not particularly formal

Is srotolare the right word?

Roll out the dough, or flatten so it's about an inch deep.

Srotolare l'impasto, o impiattire con le mane finchè non un pollice spesso.

    "stendere" l'impasto, o appiattire con le mani fino a quando (o finchè, is the same) non diviene dello spessore di un pollice

    And maybe you should convert "pollice"...that is 2,5 centimenters if I'm not wrong. I think not many people know how many centimenters are an inch.
    You "roll out" with a rolling pin, do you? So "stendere" is perfect.
