As far as I know, しゃべる is more like "talking" (with no central theme or subject), "chatting", and it is, indeed, more informal. 話す, is a little bit more formal, it means that you are talking about some topic, and it also means, depending the context, for example, to have a talk, etc.

According to GOO 辞書...
話す・・・あるまとまった内容を声に出して言って、相手に伝える。
しゃべる・・・話す。ものを言う。
