The context is - a professional doctor that was able to tackle any disease he stumbled with.

The question is - do I need to use "with" (encounter with problem), as I frequently meet sentences where encounter is used without "the"

    You seem to have a couple of questions: about "with" and about "the," which I don't see in your sentence. This one is fine, and would be incorrect with "with" at the end:

    She was able to tackle every disease she encountered.

    Tackling is not necessarily beating, of course.
