XX was a student of mine in.... while completing a degree in..... She was my student again in 2008.

Is there a better way to say this or does it work? I like simple but for some reason I think this, as is, is too simple...

If she was a student of yours on two separate occasions and had an intervening period when she was not your student, then it is a perfect sentence to describe the second time.

    Your sentence is just fine.

Unless you want to lapse into the convoluted gibberish of some educators, there's no such thing as "too simple."
