simple or progressive form

Hi everybody, I'm cuurently writing a summary and I have a question:

Do I have to write : "Today Mrs. X works as a" ... or "Today Mrs X is working as a ..."

and do I have to write "She plans to give cooking courses" or "She is planning to give ..."
