I have noticed that the dictionary doesn’t include one of the definitions of “slug” that means “to drink an alcoholic drink”.

Personally, I've never come across the verb 'to slug', meaning to gulp. I am aware that the noun 'slug' can be used to mean an informal measure of drink, generally that can be consumed in one swallow., but I have never heard this transfer across into a verb. Perhaps you're thinking of the verb 'to chug', which is to drink in gulps, as you suggested?
