Sour the boiling honey

I'm not too sure if I understand this phrase correctly. I think it means that the boys make the boiling honey sour, i.e. 'sour' is used as a verb in this context. Can somebody confirm this or, if I'm wrong, help me work out the meaning of it?

These boys of light are curdlers in their folly,
Sour the boiling honey;
The jacks of frost they finger in the hives;
There in the sun the frigid threads
