Hi,

I am watching a cooking program and in a scene a host is explaining about a bread he made.
He says " it has got a nice crumb structure ".
What does this "crumb structure" mean?
Is it something about inside of the bread?

    "Crumb structure" refers to the density, the arrangement of bread and air, how heavy (or light) and thick it is. The thickness and crumbliness is desirable, based on the kind of bread they were making.
