What is the difference between these two sentences?

1. Ecologists, who deal with the adaptation of life to the environment, even call a plant or animal that successfully invades and becomes established in a bare area a pioneer.

2. Ecologists, who deal with the adaptation of life in the environment, even call a plant or animal that successfully invades and becomes established in a bare area a pioneer.

    All sorts of life processes happen in the environment, but 'adapt' specifically takes 'to': you adapt to your new circumstances, or adapt to the conditions you find yourself in. 'The environment' is a very broad term for what organisms adapt to; they more specificlly adapt to things in it, such as higher rainfall, or colder temperatures, or lions trying to eat them.

    The first sentence tells us they are changing for the purpose of fitting the environment better. The second sentence tells us where they are while they are changing, but not why.
