Bonjour,
Would it be correct to say "Les enfants sont croissantes si grand cette année"? (The children are growing so big this year)

I realize another (better?) way might be something like "Les enfants grandissent tellement cette année" but I'm specifically trying to use "croissant" in a sentence.

"Les enfants font une grosse poussée de croissance cette année". A better (and easier) way is to say " les enfants grandissent tellement cette année".

I cannot think of a sentence using the word "croissant".

also: les enfants sont en pleine croissance
As it is a verbal form, be + ing can rarely be rendered with an adjective.
