    According to the Pocket OED:

    A crane is a tall machine with a projecting arm for moving heavy objects.
    A derrick is a type of crane with a movable, pivoted arm.
    A hoist is a system of ropes/chains and pulleys.

    The definitions in watercanyon's excellent link are rather more detailed.
