- My boss appreciates my work and respects my role as a mother. In turn, I respect my boss and work hard for him. The level of respect between me and my boss is high on both sides. I really appreciate my boss.

- Could I say "My boss and I respect each other very highly" as a equivalent as "The level of respect between me and my boss is high on both sides."?

    Yes, I think your variant sounds natural and is very close to the original. There might be a slight difference in emphasis, though: the words "on both sides" at the end of the original sentence seem to me to place some stress on this respect being mutual.
    I would say that your variant sounds neutral in its emphasis.
     
    The other way of saying includes:
    My boss respects me highly, and I reciprocate to him equally.

    "My boss and I respect each other very highly." sounds more idiomatic, although the next one you suggested is technically correct.
     
    You can, although in my experience you typically don't use high and respect in the same sentence. I'm sure it varies depending on which part of the English-speaking world you're in, but I'm used to seeing "My boss and I respect each other very much." or "My boss and I carry each other in the highest regard". However, your examples work just fine in my opinion.

    Keep in mind, if you use your first example, you need to make that you say "my boss and I" instead of "me and my boss".
