which one sounds more natural to you? thank you very much.

Originally I preferred the first one without "the", because I thought it's a generic reference to those who don't eat meat, it's not a specific reference here.
But then I realized that seemingly the sentence becomes much more natural if replacing "the" with "those" , thus specific reference should be also correct here.
So my conclusion is that all the three sentences above are correct, but the first and the 3rd one sound more natural. do you have the same feeling? Thanks.

    Yes, 1 and 3 are far more natural than 2. I would say 1 is the most natural and 3 would only be used in a specific context where something more complicated, or more directly tied into a previous sentence, was required or desired.
