(The) wine

Hi.

I am getting some conflict opinions and do not understand how to use the right article here, so I thought to ask here.

1. We went to a winery. When the wine specialist there poured out wine, his hands shook. Strange!
2. We went to a winery. When the wine specialist there poured out (the) wine, his hands shook. Strange!

Which is one is correct? I assume I am mentioning for firs time. I think they are both correct. But I think the first is better for "some wine", the second for "all the wine".

    ... poured out wine ... - any of the wines they were tasting
    ... poured out the wine ... - the specific wine they were tasting
