tidy up the edges

Hello. I am reading Flora's Lot by Katie Fforde. I don't understand the meaning of "tidy up the edges" in the following context. They are eating. Charles is a guest. Could anyone help me please?

‘Can I get you some more, Charles?’ She took his plate. ‘Are you sure? I’ll just tidy up the edges and start my diet tomorrow."
