Hello !

"Remove from the oven and leave to cool in the tin for 10 minutes before turning out onto a wire rack to finish cooling."

I have a doubt : does "turning out" mean "retourner" or just "poser"? Is the cake upside down at the end?

Right, it means to turn the pan upside down so the cake falls out (gently) onto the rack. In practice I put the rack on top of the pan and then flip them together, but that's probably too much information.

"turning out" = taking out of the tin in which it has baked. (You'll probably have to turn the cake upside down in order to do that, but the cake should cool on the rack right side up, unless the instructions tell you specifically to cool it upside down.)
