Questo mi sembra più simile all'italiano "Rigirare il coltello nella piaga".
"Uccidere un uomo morto" invece pone l'aspetto sulla vigliaccheria del gesto. You are not able to kill a man if he is in good health, you are only able to kill a man when he is weak and wounded.

Infatti la frase storica completa è "Vile, tu uccidi un uomo morto". "Coward, you're killing a dead man". Ovviamente stiamo ancora aspettando che l'OP chiarisca il contesto in cui vorrebbe usare questa frase.

That, or also possibly the idea of 'overkill'.

My feeling is that this is not really an idiomatic expression with a fixed meaning(s) different from its literal meaning, but rather a proverbial quote.

Concordo con OHBICE però sappiate che è di uso comune anche la frase letterale:

I think that's the closest to the Italian meaning, so far.
In Italian (or at least in some regions) we have: «Dare i calci per terra (a qualcuno)» too.

E' vero, esiste anche il modo di dire "Spargere sale sulla ferita".

Mah, io ci vedo delle differenze tra:

"rigirare il coltello nella piaga" / "sale sulla ferita"

Killing a dead man / beating a dead horse.

A quanto ne so io "beating a dead horse" vuole dire continuare a disquisire su un qualcosa che si è già vivisezionato, simile a "spaccare il capello in quattro"....ovviamente posso sbagliare!

Killing a dead man è qualcosa di più simile al nostro: "sparare sulla croce rossa": accanirsi contro chi non può difendersi (soprattutto metaforicamente).

Rigirare il coltello nella piaga o versare il sale sulla ferita hanno il senso di ritornare su un discorso doloroso per l'ascoltatore senza una motivazione valida.

Tutto questo a mio modesto parere, ovviamente potrei sbagliare!
