Google searches reveal that it is also used in the singular. My print dictionary states that منشیات is Pseudo-Arabic from the word نشہ. The romanized pronunciation of منشیات is munash-shiyaat.

My print dictionary is 'Standard 21st Century Dictionary: Urdu to English" (2007) compiled by Prof. Bashir Ahmad Qureshi and revised and enlarged by Dr. Abdul Haq.
You have pointed out that there are at least two pronunciations. You can either use the one you find easier to pronounce or use the pronunciation that is used by any Urdu speakers you know.

Thank you very much, marrish SaaHib.munashshiyaat is correct, I reckon, the sg. could be deduced as منشّیً munashshiyan but I'm not sure. I certainly follow the B.A. Qureshi's dictionary.
-nshsh- is not right.
manshiyaat is very common!
