With the interest in those wonders, I made a wish that one day I would visit New Zealand.

Does the phrase in bold make sense to you?
Second, could we omit that here? Thanks.

    The bolded phrase only makes sense to me if there were a group of people who were publicly interested in things about New Zealand that were considered wonderful....like some of the mountain scenery.

    Knowing that such interest had been expressed, I might want to find out what everybody was talking about - and see it for myself.

    No, I do not think you can eliminate "that"...unless you replace it with a colon...."I made a wish: one day I would visit...."
